Quakers Oatmeal Cookies

Ingredients:

  • 1 c. shortening
  • 2 c. brown sugar, packed
  • 2 eggs
  • 2 tsp. vanilla
  • 2 c. white flour
  • 1-1/2 tsp. baking soda
  • 1 tsp. salt
  • 3 c. quick oats
  • White sugar for coating cookie dough balls

Directions:

  1. Cream the shortening and brown sugar.  Add the eggs and vanilla.  Mix the flour, baking soda and salt in a separate bowl, the gradually mix in with the shortening-sugar mixture.  Stir in the oats.
  2. Roll the dough into 1-inch balls, then roll the balls in white sugar.  Place on a greased cookie sheet.
  3. Bake 10-12 minutes at 375° until cookie edges start to turn golden.
