Wheaties Cookies

  • Ingredients:
  • 1 c. shortening
  • 1 c. white sugar
  • 1 c. brown sugar, packed
  • 2 eggs
  • 2 c. white flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • ½ tsp baking powder
  • 1 tsp. vanilla
  • 2 c. rolled oats
  • 1 c. sweetened coconut
  • 1 c. Wheaties cereal

Directions:

  1. Sift together the flour, salt and leavening agents.  Set aside. 
  2. Cream shortening and sugars, then add eggs and vanilla. 
  3. Mix in flour ingredients, then stir in oatmeal, coconut, and Wheaties last.  You might want to crush the Wheaties slightly before adding, but not too much. 
  4. Roll into 1-inch-plus size balls and bake on a greased cookie sheet.
  5. Bake at 350° for 12-15 minutes until top turns golden at the edges.  Cook the longer time, depending how crispy you like your cookies.
